Cast Iron Chocolate Chip Cookie


1 stick of unsalted butter
1/2 cup of granulated sugar
1/2 cup of light brown sugar
1tsp Vanilla Extract
1 egg
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/4 tsp kosher salt
1 cup (or more) or Chocolate chips

Preheat the oven to 350.  Melt the butter in an 8-inch cast iron skillet, set over medium-low heat.  Stir sugars into melted butter and add vanilla. Remove from heat, let the pan rest until pan is warm... Not hot (Or you will have a scrambled egg. I let mine rest about 5-10 min.)

Crack an egg into your mixture, use a fork to whisk mixture and egg well.  Add flour, baking soda and salt.  Carefully stir mixture until smooth and well mixed.  Stir in chocolate chips, and bake for 15-20 min.   Top will start to be golden brown, but soft in the center.  Best served with vanilla Ice cream and drizzled with chocolate.
